Just Another Breakfast Post

I’m sure no one is surprised that this post on my breakfast this morning — but what can I say, breakfast holds a special place in my heart. There’s just such a vast variety of food to make (and who doesn’t like starting their day with something sweet!)

Raspberry Muffins: 


1/2 cup extremely finely grated apple (peel first)

1 tablespoon rice bran oil

2 cups flour

1 1/2 teaspoons baking powder

1 tablespoon lemon rind

1 1/4 cups brown sugar

2 tablespoons white vinegar + 2 teaspoons baking soda

2 teaspoons vanilla extract

1/2 cup almond milk


Peel and grate the apple and place in a small bowl. Add sugar and vanilla and stir


In a separate bowl, add the vinegar and baking soda. Once combined add into the apple/sugar/vanilla mix


In a large bowl mix together the flour, baking powder, and lemon rind. Pour in wet ingredients and stir until combined


Fold in the almond milk and the berries (stop mixing as soon as the mixture is combined)


Spoon mix in to cupcake liners and bake on 180C for 12-15 minutes or until cake tester comes out clean.



Acai Bowl: 


1 cup of ice

1/3 cup of almond milk

1/2 banana

1/3 cup frozen raspberries

2 tablespoons RioLife organic freeze-dried acai powder

1 tablespoon maple syrup


This healthy breakfast treat is so simple to make! Literally just stick all the ingredients in a blended (I use the magic bullet) and blend for a minute. It’s really great topped with granola




Kiwi Infused Water: 

Pretty self explanatory  – just some ice, chopped kiwi and water!
