A Touch of Rose Water

It has been ages since I’ve used rose water – and I often forget how much I love it! So the other day when I saw a bottle of rose water in the fridge I decided straight away that I would have to put it to good use. This doesn’t have the ‘typical’ pudding texture but was still really really yummy!

Rose Water Pudding: 

Ingredients:

2 cups almond milk

1/4 cup corn starch

 

1/3 cup raw sugar

4 tbsp rose water

3/4 cup chopped almonds

3/4 cup pomegranate seeds

Directions: 

Heat almond milk, sugar, rose water and corn starch in saucepan. Continue to stir until mixtures thickens (it takes a little bit, but trust me when it starts to thickens you’ll know!)

Whisk mixture until creamy and then leave to cool

While the pudding mix is cooling remove pomegranate seeds and place in a bowl

Chop almonds

Layer the almonds, pomegranate and pudding mix between a few glasses. Top with mint.
