4 cups flour, plus extra for kneading the dough

1.5 cup shredded coconut

2 tbsp sugar

2 tsp baking powder

1/4 tsp sea salt

1/2 cup coconut oil

1 tsp vanilla extract

1 1/2 cups almond milk


1: Preheat oven to 200C

2: In a large bowl mix the dry ingredients

3: Mix in coconut oil

4: Add the vanilla extract and then slowly mix in the almond milk working the dough as little as possible, until you have a dough that just barely sticks together

5: Turn the dough out on a heavily floured cutting board

6: Kneed the dough slightly. When it is done, it should be easy to handle and smooth

7: Gently pat the dough in to two 1 1/2 inch thick disc

8: Cut each disc in to 6 pieces

9: Transfer scones to a tray lined with baking paper

10: Bake scones for 15-20 minutes or until very lightly golden
