Raspberry Crumble Bar

1/2 cup dark brown sugar plus 1 tablespoon

2.5 cups homemade oat flour 1 tsp baking powder

1/4 cup coconut

3/4 cup coconut oil, solid (NOT melted)

1/4 rice bran oil 12 oz raspberries

1 tablespoon lemon juice

Directions:

1: Preheat oven to 175degrees.

2: Put baking paper in a 8″ square inch tray

3: Mix dry ingredients.

4: Stir in coconut oil. Mix with hands to break apart coconut oil.

5: Add oil until the consistency is correct (should hold form when pressed together and not crumble).Press half of dough into bottom of pan for base.

6: In another bowl toss berries with remaining tablespoon sugar and lemon juice. Pour over dough. Crumble remaining dough over top (press).

7: Bake for 40 minutes until top is golden brown.

8: Let cool for five minutes and then cut in to squares
