Lemon and Raspberry Cake with Streusel Topping

Ingredients:

Cake:

2 cups flour

1/2 cup brown sugar

3 tsp baking powder

1 tsp cornflour

Zest of 1 lemon

1 cup almond milk

1 tblsp apple cider vinegar

4 tblsp rice bran oil

Frozen raspberries

Streusel crumb:

3/4 cup oat flour

1/2 cup brown sugar

1/4 cup rice bran oil

Directions:

1: Mix almond milk and vinegar and set aside

2: Combine dry ingredients

3: Mix in oil and milk/vinegar

4: Pour 3/4 mix in to 8’x9′ inch lined pan

5: Cover entire top layer with raspberries

6: Pour left over mixture over

7: Mix together streusel ingredients and crumb over the top

8: Bake in oven on 175 for 20-25 minutes or until cake testy comes out clean
