1/4 Cup extremely finely grated apple
1 1/4 cups almond milk
1 teaspoon vanilla extract
2 1/2 cups homemade oat flour
2 teaspoons baking powder
1 tsp baking soda
1 tsp ground cinnamon
3/4 cup dark brown sugat sugar
1 1/2 cups shredded coconut
1/4 Cup rice bran oil
1: Preheat oven to 175 degrees. Line muffin tin
2: In a small bowl whisk together applesauce, milk and vanilla.
3: In a large bowl, whisk together flour, baking powder, baking soda, and cinnamon.
4: Add sugar and coconut and stir to mix. Stir in milk mixture, mix in oil
5: Pour in to muffin liners. Bake for 13-15 minutes or until cake tester comes our clean.
6: Allow to cool for5 minutes.
