Coconut Loaf




1/4 Cup extremely finely grated apple

1 1/4 cups almond milk

1 teaspoon vanilla extract

2 1/2 cups homemade oat flour heaping

1/4 teaspoon table salt

2 teaspoons baking powder

1 tsp baking soda

1 tsp ground cinnamon

1 cup dark brown sugat sugar

1 1/2 cups shredded coconut

1 tablespoon lemon juice

1/4 Cup rice bran oil


1: Preheat oven to 175 degrees.

2: Cover loaf pan in baking paper

3: In a small bowl whisk together applesauce, milk and vanilla.

4: In a large bowl, whisk together flour, salt, baking powder, baking soda, and cinnamon.

5: Add sugar and coconut and stir to mix.

6: Make a well in the center, pour in milk mixture and lemon juice, then stir wet and dry ingredients together until just combined.

7: Add oil and stir until just combined — be careful not to over mix.

8: Spread batter in pan and bake until a toothpick inserted into the center comes out clean, anywhere from about 45 minutes – 1 hour.

9: Cool in pan five minutes, before turning out onto a cooling rack.
