Chocolate Biscotti




1 cup flour

1/4 cup cocoa powder

3/4 tsp baking powder

1/4 tsp baking soda

1/2 tsp vanilla extract

1/4 cup sugar

1/4 cup almonds

1/4 cup oil

4-5 tblsp water


1: Sift flour, cocoa powder, baking powder and baking soda

2: Pulse almonds in food processor  and add to flour

3: In a bowl add water, vanilla, sugar and oil  – mix until sugar has dissolved and add to the flour mix

4: Knead into dough

5: Place on baking sheet in a log shape

6: Flatten log to 1inch thickness

7: Bake on 160C for 25 minutes

8: Take out of oven, turn oven down to 130, and slice (diagonally for long biscotti and across for shorter)

9: Lay biscotti pieces face up and bake for 8 minutes to dry out
